Heat broth in a large pot with bay leaves and barley to a boil. Let soften. Meanwhile heat oil in a large stock pot and sauté onions & garlic for a few minutes. Add carrots, celery & mushrooms and sauté till soft. Pour broth with barley and bat leaves in. Let all cook together in low for another 20 minutes or so. Add salt and pepper to taste and enjoy!
