✔️Heat a large pan over medium high heat with olive oil. Simply lay down eggplant in an even layer. (You may have to do this process twice & if so use more olive oil!) Cook each side 2-3 minutes until golden and just starting to char. *If you have time sweat out the eggplant by sprinkling kosher salt on each slice. Letting sit for about 10 minutes and drying off with paper towels before sautéing! This will eliminate some of the moisture
