What you need

cup celery

dried bay leaves

lb mushroom mix

olive oil

garlic

tsp salt

cup baby carrots

qt vegetable broth

yellow onion

black peppercorn
Instructions
Heat broth in a large pot with bay leaves and barley to a boil. Let soften. Meanwhile heat oil in a large stock pot and sauté onions & garlic for a few minutes. Add carrots, celery & mushrooms and sauté till soft. Pour broth with barley and bat leaves in. Let all cook together in low for another 20 minutes or so.
