✔️Heat a large pan over medium high heat with olive oil. Simply lay down eggplant in an even layer. (You may have to do this process twice & if so use more olive oil!) Cook each side 2-3 minutes until golden and just starting to char. *If you have time sweat out the eggplant by sprinkling kosher salt on each slice.
